NAM D owner Nikki Chung speaks with Jonathan Mitchell. Nikki Chung is owner-operator of NAM D – meaning ‘food to go’. Her specialty is the traditional bánh mì sandwich. With a nod to the French influence in Vietnamese cuisine, she sources local ingredients where she can, including from Randwick Meats in Lower Hutt and bread from Pandoro bakery, to craft the authentic short baguette needed. Chung estimates she sells about 80 to 100 bánh mì daily in winter through her five shops, doubling that in summer. Recorded July 1 2022.
